Vegan Chocolate Blueberry Cupcakes

I’m going on a month long spring break vacation and needed to use up the perishable food I have, one of them was blueberries and thought why not chocolate blueberry cupcakes. I once had raw dark chocolate with blueberries and thought it was really good, so I did it in cupcake form.

This time I was able to get the 12 cupcakes. Since I have to use up everything, I had some leftover frosting to pipe a little bit on each one.

I topped each one with an additional blueberry to pretty it up.

Took these and my leftover champagne to my friend’s house for many of us and made mimosas, since three of us of leaving for our vacations the same day.
