My friend really loves Reese’s peanut butter cups and I decided to make them into cupcakes for her birthday.
I made the black bean brownies recipe for the base, but added a little surprise in the middle….a peanut butter cup of course.
Made a peanut butter frosting and added a peanut butter cup to top it off!
The frosting wasn’t that bad to me and I don’t like peanut butter.
Makes 12 cupcakes
• Brownie cake mix
• Can of black beans
• 12 Reese’s peanut butter cups
Add brownie mix in a large bowl. Open can of beans and remove the water, fill with regular water to the top and purée in blender. Add to brownie mix and mix until combined.
Preheat oven to 350 degrees. Add a little bit of batter to each muffin cup then add a peanut butter cup to each one. Fill the rest of the cups with the remaining batter. Bake for 30 minutes and cool before frosting.
Peanut Butter Frosting
• 4 tablespoon(s) unsalted butter, softened
• .50 cup(s) creamy peanut butter
• 1 cup(s) confectioners’ sugar, sifted
• 2 tablespoon(s) milk
In a medium bowl, with electric mixer on medium speed, beat butter and peanut butter until well blended.
Add confectioners’ sugar and beat until combined. Add milk and beat until frosting is smooth and fluffy. Makes 1 1/3 cups.
