Spinach Smoothie Gelato & Vegan Pancakes

This is the smoothie I’ve made before, but thought it would be cool and different to turn into popcicles. I don’t have the molds so I made it scoop able.


It was really hard so it would have been better as popcicles, next time.



I used about 10 ice cubes, a whole large diced apple, half a banana, 2 handfuls of spinach and a splash of water.


Blend and pour.


I covered it with foil since I don’t have Saran wrap.


It was so hard I had to use a knife to stab it. Even after putting it in the microwave, so it would definitely be better as popcicles.

I stayed over at my vegan cousin’s house this weekend and she had a box of gluten free pancake mix. She makes her own almond milk and used that in place of regular milk and that made them vegan too.


I’ve made many pancakes before so these came out fluffy. The box said 2 cups of the pancake mix with 1 1/2 cups of milk was enough for 14 pancakes. My cousin decided to add 2 cups of milk instead, they must have been for tiny pancakes cause we only got 6!


I made mine with Brazilian nuts, so good! They were very thick, fluffy and filling. I used Cherrybrook Kitchen Gluten Free pancake mix.
