My aunt told me she had ripe bananas and didn’t want to throw them away, so she asked me if I could do something with them, I said yes. I decided I would make banana cupcakes using my vegan recipe, but wanted to switch it up and make it different and more fall. I added in caramel.
I added Halloween cupcake toppers I made, ghosts and pumpkins.
Brown Sugar Cream Cheese Frosting
• 1 8oz package cream cheese, softened
• 2 Tbsp unsalted butter
• 2 Tbsp light brown sugar
• 1 tsp vanilla extract
• 2-3 Tbsp caramel
Melt butter and allow to cool. In a large bowl, combine cream cheese, butter, brown sugar, vanilla and caramel. Beat with electric mixer. Do not over mix or it will collapse. Spread immediately.
