Banana Caramel Halloween Cupcakes

My aunt told me she had ripe bananas and didn’t want to throw them away, so she asked me if I could do something with them, I said yes. I decided I would make banana cupcakes using my vegan recipe, but wanted to switch it up and make it different and more fall. I added in caramel.



I added the batter in the tin then added caramel above each one and swirled it with a toothpick like the Nutella swirl muffins.

Did the same with a mini cake because I had leftover batter.


They came out looking very caramelized and smelled amazing!


I didn’t have enough frosting for the last two cupcakes because I used some for the mini cake, so I put on what was left with a knife. I used a cream cheese recipe and added caramel.


I added Halloween cupcake toppers I made, ghosts and pumpkins.



Brown Sugar Cream Cheese Frosting

• 1 8oz package cream cheese, softened
• 2 Tbsp unsalted butter
• 2 Tbsp light brown sugar
• 1 tsp vanilla extract
• 2-3 Tbsp caramel

Melt butter and allow to cool. In a large bowl, combine cream cheese, butter, brown sugar, vanilla and caramel. Beat with electric mixer. Do not over mix or it will collapse. Spread immediately.
