I got a mini cupcake maker for Christmas from a friend and tried it out. It makes 7 cupcakes at a time so I wanted a recipe for a small amount, I used a vanilla recipe that came with it. I made 21 total, 11 vanilla and for the remaining batter I added cocoa powder to make 10 chocolate cupcakes.
They baked up real fast, I was impressed. The vanilla came out light in color because I used egg whites.
I got the idea to add a peppermint kiss inside each chocolate cupcake, the tip was sticking out, but it melted down 🙂
I had mini Christmas liners I bought after the holidays last year for 75 cents each back when I was working at Michaels. I used the light green for the vanilla and the red for the chocolate, which worked well since I turned the chocolate ones into chocolate peppermint.
I crushed up some peppermint candies and sprinkled them on the chocolate ones. I only sprinkled green sprinkles on the vanilla one I was going to try. The chocolate ones were definitely better.
Original recipe from booklet:
Ingredients
• 3/4 cup flour
• 1/4 cup and 2 Tbsp sugar
• 1 egg
• 1/2 tsp vanilla extract
• 1/4 tsp nutmeg (will use less or opt out next time)
• 1/2 tsp baking powder
• 1/4 cup buttermilk
Mix dry ingredients.
Stir in buttermilk, vanilla and egg. Beat with a fork.
Pour into wells.
Next up will hopefully be champagne cupcakes for New Years.
