Almond & Orange Mango Cake Balls

My aunt placed an order for cake balls so she can have something with her coffee in the mornings. She wanted a dozen of one kind and half of another, I chose orange mango for the dozen and almond for the half.

Had some extra which some others and I enjoyed. I bet these would be nice as pancakes…future project.

Orange Mango Cake Balls

• 1 egg white

• 2 tablespoons sugar

• 2 tablespoons butter, melted

• 2 teaspoons orange mango juice ( I used simply orange with mango)

• 1/3 cup unbleached all purpose flour

• 1/2 heaping teaspoon of baking powder

• pinch of salt

• 1 1/2 tablespoons milk

Directions

This is enough for 6 mini cupcakes.

In a glass mixing bowl, melt your butter until just soft, add egg white, sugar vanilla extract and juice whisk until well combined. Add flour, baking powder and salt, whisk until smooth, stir in milk. Spray cake ball machine with non-stick spray and divide batter equally between domes. Machine will tell you when they are ready. If you are baking them, set the oven at 350 degrees and bake for 10-12 minutes or until toothpick comes out clean.

• 1/2 teaspoon almond extract

• 1/4 heaping teaspoon of baking powder
