I made all these the day I was leaving on my month long vacation, March 2nd, but didn’t have time to post. Again since I was going to be gone for a month, I couldn’t leave my ripe bananas and had to use them…all 10 of them! I made two banana nut breads and 12 muffins. I also had some leftover dulce de leche frosting I had to use up and frosted some of the muffins to make cupcakes.
I made one loaf for my friend’s mom, another for the person I’m living with and the cupcakes and muffins for my aunt, my friend and I and the last four I took on the plane to give to my parents.
Frosted 7 of the muffins with dulce de leche frosting to have the best of both worlds, muffins and cupcakes.
I didn’t want to frost all of them, but still had some frosting leftover, so I used the rest to make a mini pie topped with almonds, pretty good.
