Back to Basics…in New York

Yes, it has been a long time since I’ve posted anything, that’s because I’ve moved to NYC and have been working all the time, so I haven’t baked anything, until now. I’m working as a personal assistant and my only day off is Saturday and this past one I finally went upstate to visit my cousin and she put me to bake with her son, I was not complaining!

It was a prepackaged gluten free brownie mix, we just added grounded flax seeds, melted vegan butter and water.

Added coconut oil to the pan and baked for 40 minutes.

End product was a gooey brownie that would’ve been better with nuts, but none were added.

This was taken in Ossining when I had just passed Sing Sing prison. Up here the leaves have changed and are already falling off, not yet in the city.

This was at my cousin’s house where they are surrounded by trees. Big difference up here than in the city, fresher air, more peaceful, less stressful, definitely needed this.

Banana Bread with Homegrown Bananas

Well I now have an oven way out here and of course I was the first to use it! My parents have many banana trees and by the time we were going to get the oven, the bananas were going to be ripe and I definitely had to make banana bread.

Mixing my ingredients and mashing bananas with music of course, I was in a country mood.

I wanted to make more than just bread, so mom found me this short muffin pan.

The kitchen smelled the way a kitchen should smell! It was making dad hungry while painting the walls.

Presented the muffins on a glass cake stand and found a plate that actually belongs to a candle set for the bread, which fit perfectly.

With these goodies, since in Nicaragua, I used organic bananas from parent’s land and pure vanilla extract that was very thick.

Ice Cream Topped Black Bean Brownies

My friend and I bought two brownie mixes and two cans of black beans to make on two separate occasions, black bean brownies topped with ice cream. She had all her brownies with cookie dough ice cream, I had mine with pumpkin ice cream then the second time with butter pecan ice cream. Nice little treat on these cold days, warm brownie with ice cream.

Vegan Adventures In NY (Part 2)

Remade the blueberry muffins recipe with my cousin, but this time paleo diet inspired and substituting the blueberries with an awesome whole foods nut mix. Again sorry for late posts, it’s difficult without internet. Now I have the WordPress app on my new phone so it should be easier.

Vegan Adventures in NY (Part 1)

Well, I’m in New York for the month of June and will be baking only vegan things here since I’m staying with my vegan cousin and we have other family members living in the same building who are vegans as well. There was a community block party happening over the weekend for the community residents and it was a potluck. I made two batches of the vegan blueberry muffin recipe, but I turned one into bread by baking it in a 9×13 pan and kept the other as muffins with banana pieces.

Cookie Brownies

This is the first time I make something since before my vacation in March. My friends and I got together and one of them brought a cookie brownie mix which meant I had to make it. I was meant to post this last month, but I have no Internet anymore so please bare with.

Lots Of Banana Treats

I made all these the day I was leaving on my month long vacation, March 2nd, but didn’t have time to post. Again since I was going to be gone for a month, I couldn’t leave my ripe bananas and had to use them…all 10 of them! I made two banana nut breads and 12 muffins. I also had some leftover dulce de leche frosting I had to use up and frosted some of the muffins to make cupcakes.
