Mini Vegan Marble Cake

It was a snowed in kind of day and I was in the mood to bake something. I wanted something simple and started looking at my recipes, didn’t want any of those so I looked through Vegan Cupcakes Take Over The World and settled on the chocolate cupcake recipe. I had done that recipe before so I wanted to make it different this time and another experiment in the kitchen was underway. I decided on making it half chocolate and half normal so I can turn it into a marble cake.

I had made marble cake in the past so I knew how to get “my swirl on”.

Ingredients

I mixed up the ingredients like adding some coconut oil and also made them gluten free.

Poured the chocolate half, then the non chocolate and swirled!

I made it on a Friday which worked out well because a cousin from DC was visiting that weekend and arriving that day, so we all had some together. The end result was very moist and not too sweet, it was good, but I would probably tweak it some next time I make it.

Original recipe:

Vegan Chocolate Cupcakes

• 1 cup soy milk
• 1 teaspoon apple cider vinegar
• 3/4 cup granulated sugar
• 1/3 cup canola oil
• 1 teaspoon vanilla extract
• 1/2 teaspoon almond extract, chocolate extract, or more vanilla extract
• 1 cup all-purpose flour
• 1/3 cup cocoa powder, Dutch-processed or regular
• 3/4 teaspoon baking soda
• 1/2 teaspoon baking powder
• 1/4 teaspoon salt

1. Preheat oven to 350°F and line a muffin pan with paper or foil liners.

2. Whisk together the soy milk and vinegar in a large bowl, and set aside for a few minutes to curdle. Add the sugar, oil, vanilla extract, and other extract, if using, to the soy milk mixture and beat until foamy. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in two batches to wet ingredients and beat until no large lumps remain (a few tiny lumps are OK).

3. Pour into liners, filling 3/4 of the way. Bake 18 to 20 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely.

Halloween Muffins

For Halloween I made orange creamsicle muffins and a cake from a cake mix I had bought a while back and gave to my friend’s mom along with other foods that I was getting rid of since I was moving. She brought it to New York since she was traveling with me and she just left early this morning. I had given her a pink lemonade cake mix as well and had given me the choice of which one to bring, I chose the orange creamsicle since it was orange, more appropriate for Halloween and fall.

Dulce de Leche Mother’s Day

Mother’s Day was coming and got an order for a dulce de leche cake, since the recipe is for a larger cake, I was able to make a 9″ cake which would work out since my grandparents were leaving back to their country and I would stay the night at my aunt’s where they were before they would leave. Again, sorry for the late posts since I no longer have Internet.

Marble Dome Cake

I had another order for a birthday cake, marble and 2 dozen peppermint cake balls for this past Monday. Since I had a previous order for peppermint cake balls, I used up all the chocolates for the coating and had no ride to go buy some and then the pick up was moved for 4:15pm instead of 6pm like before. I had no choice, but to go walking to Walgreens for the chocolates which was 30 minutes to and from so that was an hour lost. I managed to make it all in time 🙂

My friend placed an order for a 6″ dulce de leche cake and a dozen peppermint cake balls for her mom’s birthday on Sunday. Since it was such a small cake I had a lot of batter leftover so I made a 9″ cake as well.

Baby Shower Owl Cake and Cake Balls

I had a cake order for a baby shower Saturday from my cousin so I stayed over her house Friday for some late night and early morning baking because she also wanted cake balls. Made 5 1/2 dozen vegan banana cake balls and prepared the dry ingredients for the 2 batches of maple carrot cake the night before. The next morning I mixed the two batches of wet ingredients and mixed them all, then peeled and shredded the carrots to fold in. I had some leftover batter so I made 3 1/4 dozen cake balls.
