Birthday Coconut Cupcake Tower!

My birthday was August 10 and it was going to be my last one in Miami so I wanted to have a small party. Turned out to be very small because none of my friends showed up. I made about 24 coconut cupcakes to display them in the cupcake tower.

Blueberry Yogurt Pies and Pink Cupcakes

 

 

 

Made some strawberry cake mix cupcakes with strawberry frosting for some all pink cupcakes for a friend’s birthday. I decided I would finally try out the rose as the frosting and they were great.

Lots Of Banana Treats

I made all these the day I was leaving on my month long vacation, March 2nd, but didn’t have time to post. Again since I was going to be gone for a month, I couldn’t leave my ripe bananas and had to use them…all 10 of them! I made two banana nut breads and 12 muffins. I also had some leftover dulce de leche frosting I had to use up and frosted some of the muffins to make cupcakes.

Vegan Chocolate Blueberry Cupcakes

I’m going on a month long spring break vacation and needed to use up the perishable food I have, one of them was blueberries and thought why not chocolate blueberry cupcakes. I once had raw dark chocolate with blueberries and thought it was really good, so I did it in cupcake form.

Amsterdam Cupcake Tower

My cousin got a job offer and just moved to Amsterdam this week, on Saturday was her bon voyage party with the family. I took the opportunity to make cupcakes and use the 3 tier tower she had given me. Since it’s Amsterdam, I had to make chocolate ones and since I’ve been wanting to try out a recipe from Vegan Cupcakes Take Over The World, it was a no brainer. The others were white cake and orange mango and I used white chocolate frosting.

Dulce de Leche Heart Cake

My friend’s mom had a birthday coming up and she wanted to order her a dulce de leche cake like the one I had made before which they loved, but she wanted this one in a heart shape.

Valentine Flavor Cupcakes

Sorry it took me an extra 3 days to post this, but I was busy this weekend with my cousin’s bon voyage party on Saturday and I stayed over. It was a lot of work, running around different stores and a lot of heavy lifting.
I had another kind of last minute order early Tuesday evening to be picked up the next day at 5pm for a Valentine work party the next day. My aunt ordered them for her husband and some for my cousin, she wanted two dozen with divided flavors of strawberry, chocolate and champagne and one dozen with half vegan and half with the chocolate covered strawberry cupcakes which was half strawberry and half chocolate. Also different flavor frosting for each cupcake flavor; strawberry, chocolate, champagne and a vegan one.

Floral Vanilla & Dulce de Leche Cupcakes

I had a last minute order early Friday evening for two dozen cupcakes to be picked up the next day at 11am, vanilla and dulce de leche. I didn’t have any whipped cream to make the frosting and was trying to find a ride to the supermarket to get some, but none of my aunts were replying, so I did what I could with what I had and made another type of frosting for the dulce de leche cupcakes and used the leftover white chocolate frosting I had for the vanilla which was enough for all 18 and and a frosting shot for me!

Chocolate Dipped Strawberry Cupcakes

I had a few strawberries I had to use up before they went bad, but didn’t have enough to make a dozen strawberry cupcakes. Maybe only for half and so I got the idea to make half chocolate and half strawberry cupcakes. I called them chocolate dipped strawberry cupcakes, great for this time since Valentines is near.
